Ice cream is one of those things that looks simple from the outside, Verity, but there are a few boxes to tick before you can start serving cones. The good news is none of them are difficult once you know the order to do them in.

The first and most important step is to register as a food business with your local council. Soft serve counts as a food business just like any burger van does, so you register with the environmental health team at the council where your trailer is based, and you need to do it at least 28 days before you start trading. It is free, and once you are on their list an Environmental Health Officer may come and have a look at your setup. Whippy ice cream is a dairy product, so they will want to see that your mix is kept properly chilled and that the machine is cleaned and sanitised every single day. That daily clean is not optional. A soft serve machine that is not stripped down and washed out regularly is one of the quickest ways to end up with a hygiene problem, and the EHO knows it, so it is the first thing they look at.

You will also want a Level 2 Food Hygiene certificate. It is a short online course, costs around £15 to £25, and it reassures both the EHO and your customers that you know your temperatures and your cleaning routines.

Where you trade decides the next licence. If you are pitching up on the street or any public land, you need street trading consent from the council, which you apply for and pay for locally. If you are working private events, weddings, fetes and the like, you do not need street trading consent, but you do need the landowner or event organiser's permission to be there. If you plan to tow the trailer around and sound chimes like a traditional van, there is a national code that limits when and how long you can play them, so it is worth a read before you annoy a whole street.

One last thing people forget: ice cream contains milk and the cones usually contain wheat, both allergens, so keep clear allergen information to hand for anyone who asks.

Get the council registration in first, then the hygiene certificate, then sort your trading permission for wherever you are setting up. Do it in that order and you will be serving in no time.
