What cooking equipment requires canopy/extractor ?

Hi there,
I am about to fit in cooking appliances into my van. I was wandering if appliances such small gas griddle and 2x gas salamanders need a canopy/extractor installed above them ?

Extractor fan over double Gas Fryers

Hi I just bought a old Catering trailer
But I notice their isn't a hood or canopy over the fryers I asked the owner don't you need one
She said she doesn't as the trailer has 2x front hatches and 2x side hatches so she can get away with it is this legal also will it pass a inspection from environmental Health 🤔

can you explain roughly what is the interlocked type?
question 2.
canopy with natural ventilation means canopy with one outflow opening which extract fumes out of the van? no mechanical fans required ?
I do have 2x 50cmX50cm hatch windows installed in the roof.

Hello,

A canopy either interlocked mechanical or naturally ventilated is required.
If one is not fitted, and no interlocked ventilation is fitted, air quality needs to be tested with appliance running, door and hatch closed, most installations fail this.
