Using griddle in other ways

Hi! Wondering if there are any other ways anybody have used the griddle on a burger van?
We have recently purchased a burger van however we plan on using barbecues for most of our cooking.
Wondering if anybody have ever used the griddle as a Baine Marie?

Hello Dominique,

A griddle is quite specific piece of equipment, you can use it to heat up/cook many types of food, but it won't be a good replacement for a Baine Marie. Maybe use it or keep it as a backup, heat up buns to cook some side orders to accompany the main menu.
