How Do I Start a Milkshake Truck Business in the UK?

Hi all,
I was wondering if someone can help me. I am interested in starting up a milkshake truck business as it's coming up to the summer I thought it would be a great idea and who knows where it'll take me right? I'm thinking milkshakes and maybe even waffles and coffee but I don't want to do too much as I really want to keep costs low at this early stage. The thing is I literally have no idea where to start, I just have my "vision" but don't know how to get there. I don't have any food hygiene certificates for anything like that. I don't know where to start with hiring out trucks or anything - I'm a total beginner. If anyone can shed some guidance I'd be very grateful.
Many thanks!

How Do I Start a Milkshake Truck Business in the UK?

Welcome to one of the nicest ways there is to start out, and the fact you want to keep things simple tells me you are already thinking like a caterer rather than just a dreamer. A milkshake truck is a lovely summer starter, so let me set out where to actually begin.

The good news is that the only qualification you legally need is a Level 2 Food Hygiene certificate. You can do it online in an afternoon for around twenty pounds, so you can cross that worry straight off your list. It sounds very official, but it is genuinely beginner friendly and nobody fails it if they read the material.

Once that is sorted, register as a food business with your local council. It is free, and you need to do it at least 28 days before you start trading. Your Environmental Health Officer will usually want a quick look at your setup before you open, so treat them as a helpful guide rather than someone to fear. Every EHO I have ever dealt with wanted me to succeed, not to catch me out.

On the truck itself you have exactly the right instinct about keeping costs down. You do not need a shiny fifty thousand pound rig to make a go of it. Plenty of people begin with a modest secondhand van conversion, or by hiring a trailer for the season to test the water before they commit any real money. Keep the menu tight too, just as you said. Milkshakes carry lovely margins, and you can always add waffles or coffee later once you have learned where your busiest pitches are.

One thing worth remembering is allergens. Milk is an allergen, and waffles bring in gluten and egg, so have your ingredient information ready to show customers. It is simple to do and your EHO will expect it.

You clearly have the vision, and honestly that is the hardest part to teach. The rest is just a sequence of small steps, taken one at a time.

All the best

David
