How Do I Power and Install an Espresso Machine in a Mobile Coffee Van?

I am in the process of research for my mobile coffee van business. I will be selling "proper coffee" and real loose leaf teas. I have been researching coffee machines for going on 10 hours now and while concluding some things, I still have some questions for those of you who have commercial espresso machines in your units:
1. Do you run your machine off of electricity and gas, or just electric?
2. Do you have an on-board electricity supply or are you always rigged up? I want to be self-sufficient i.e. not have to rig up to a mains supply, but some other forums imply that running a coffee machine off of power units/solar panels will be impossible.
3. Do you have a large reservoir feeding your machine - if so does this come with the machine purchase or is this something that you had to source separately?
4. Did you get a coffee van conversion company to install it all, or a machine engineer? I was hoping to do everything myself but then have a qualified gas engineer (is that even what they're called!?) to quality check and provide my gas safety certificate if necessary i.e. if I choose to get a gas powered machine.
A lot of questions - but your advice would be greatly appreciated!!
