I only serve coffee so can my hot water from the coffee machine and my cold water is on a sink? With I have a issue with environmental health?? The size of the coffee cart is 2m 50cm length???

Good question — this is one that catches a lot of people out, especially on smaller carts where space is tight.

The short answer is: environmental health officers will expect you to have a dedicated hand wash basin with hot and cold running water available at the same point. That means a single basin where you can mix hot and cold to wash your hands properly. Having your hot water on the coffee machine and cold water on a separate sink in a different spot may not satisfy that requirement.

The reason is that hand washing needs to happen at a basin that is used only for hand washing — not for rinsing cups, not for food prep, just hands. And it needs to have hot and cold water (or a mixer tap) so you can wash at the right temperature. Most environmental health officers are quite strict on this one.

At 2.5 metres, your cart is on the smaller side, but it is still perfectly doable. A lot of coffee carts that size fit a small hand wash basin with a simple pump-fed system — a foot pump or a small 12v pump with a little water container underneath. You can get compact hand wash stations specifically designed for mobile units. Hot water can come from a small inline heater or even a small urn dedicated to the hand wash basin.

Here is what I would suggest:

1. Fit a small dedicated hand wash basin with hot and cold water (or a mixer). Keep it separate from any sink you use for washing equipment or cups.

2. Make sure you have soap and paper towels right next to it — environmental health will check for this.

3. Register your food business with your local council at least 28 days before you start trading (this is free).

4. Get your Level 2 Food Hygiene Certificate if you have not already — it is cheap, can be done online in a few hours, and most councils expect it.

5. When your environmental health officer does visit, they are usually quite helpful. Explain your setup and ask what they need to see. Every council is slightly different, but the hand wash basin rule is pretty universal across Scotland and the rest of the UK.

Do not let the environmental health side put you off. A small coffee cart is one of the simplest setups to get compliant — you just need to make sure the hand washing situation is sorted properly.
